Chicken Confetti

ingredients

  • 1 (3 lb) cut up chicken
  • 1 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp cooking oil
  • 1 medium onion, chopped
  • 1 garlic clove, minced
  • 2 (24.5 oz) cans diced tomatoes (not drained)
  • 1 (8 oz) can tomato sauce
  • 1 (6 oz) can tomato paste
  • 1 1/2 tsp dried basil
  • 1 (7 oz) pkg spaghetti, cooked & drained

directions

  1. Sprinkle chicken with 1/2 tsp. salt & pepper.
  2. In a large skillet over medium heat, brown chicken in oil. Remove chicken & set aside.
  3. Reserve 1 tbsp. drippings in skillet; add onion & garlic. Saute until tender.
  4. Add tomatoes, sauce, paste, basil & remaining salt; bring to a boil.
  5. Return chicken to skillet. Reduce heat; cover & simmer for 60-70 minutes or until meat is tender. Serve over spaghetti.
