Chicken Confetti
ingredients
- 1 (3 lb) cut up chicken
- 1 tsp salt
- 1/4 tsp pepper
- 2 tbsp cooking oil
- 1 medium onion, chopped
- 1 garlic clove, minced
- 2 (24.5 oz) cans diced tomatoes (not drained)
- 1 (8 oz) can tomato sauce
- 1 (6 oz) can tomato paste
- 1 1/2 tsp dried basil
- 1 (7 oz) pkg spaghetti, cooked & drained
directions
- Sprinkle chicken with 1/2 tsp. salt & pepper.
- In a large skillet over medium heat, brown chicken in oil. Remove chicken & set aside.
- Reserve 1 tbsp. drippings in skillet; add onion & garlic. Saute until tender.
- Add tomatoes, sauce, paste, basil & remaining salt; bring to a boil.
- Return chicken to skillet. Reduce heat; cover & simmer for 60-70 minutes or until meat is tender. Serve over spaghetti.
